[Complex estimation of qualitative parameters of gooseberry fruits]

The results of study of marketable value, physico-mechanical, chemical and technological qualities of berries of 35 gooseberry cultivars were given. The large variety of studied parameters was established: average berry weight varied from 1,7 to 6,5 g depending on a cultivar and a year, the content of dry matters varied from 11,8 to 15%, od sugars - from 9,3 to 12%, general acidity - from 1,9 up to 2,5%the content of catechins amounted 208,8-489,6%, of pectin substances - 0,61-0,99%. The best cultivars for fresh berry consumption and for processing, the sources of high levels of several parameters were selected and degree of their variation was established. The following cultivars had the best combinations of berries size and flavouring qualities: Slivovyj, Rodnik, Rozovyj-2, Rozovyj Ranniy, Medovyj, Donetskiy Pervenets, Neslukhovskiy. The following cultivars had an optimal combination of chemical and technological characteristics: Chernomor, Chernoslivovyj, Ruskiy, Kazachok, Slivovyj. Thornfree cultivars and cultivars with little thorn number did not yield in fruit biochemical composition to cultivars with thorns
