Reduction of water pollution by waste whey processing

The disposal of waste whey into municipal waste water systems and water currents causes significant pollution of rivers, especially by organic compounds. Discharge of only 10 cubic dm waste whey causes increase of the BOD5 as 42 equivalent citizens. Most profitable solution of this ecological problem is processing of waste whey into high valuable products which are used in food industry, pharmaceutical industry and medicine. We have shown that low-temperature regime of whey concentration and fractionation that was based on vacuuum evaporation and ultrafiltration did not cause protein denaturation, what was proven by differential scanning calorimetry (DSC).
