In the years 1995 to 1997 field trials were conducted to study the effect of soil-climatic conditions, altitude, variety, year of cultivation and ecological cultivation on reducing sugar (RS) content in fresh tuber matter. Significantly lower RS concentration was determined from three years' trial in potatoes from drier and warmer low regions (0.44%) compared with more humid and cooler traditional potato growing regions from higher altitudes in the Czech Republic (0.56%). The variety had a significant effect on the RS content. The varieties Ornella (0.26%) and Agria (0.37%) differed significantly from the varieties Sante (0.61%) and Rosella (0.72%). The year of cultivation had the greatest effect on RS content, as the average value of RS content varied from 0.22% in 1997 to 0.81% in 1996. A definite decrease in RS concentration was demonstrated when using ecological cultivation. It varied between 8% (1996) and 59% (1997). The difference was significant only in the year 1997.
