Field trials were conducted in different Czech localities between the years 1995 and 1997 in order to determine the effect of variety, altitude, year and organic agriculture on nitrates concentrations in fresh potato tubers. Significantly higher nitrates conc. were determined in tubers from dry and warm low regions than from traditional potato growing localities (145 mg NO3/kg vs. 114 mg NO3/kg). Significant differencies were also found among the 7 varieties tested. The highest average nitrate conc. was determined in the variety Impala (204 mg NO3/kg), the lowest one in Agria (70 mg NO3/kg). The year was the most powerful environmental factor influencing nitrates conc. (169 mg NO3/kg in 1995, 107 mg NO3/kg in 1996, 112 mg NO3/kg in 1997). Lower but statistically insignificant values were obtained when using ecological cultivation than when using the conventional one.
