The effect of the number of reciprocal pressurization (RP) times on the inactivation and injury of Bacillus subtilis spores at 400MPa (effective to increase the inactivation ratio) was investigated. The inactivation power of spores did not increase after more than 2 times of RP at 25, 35 and 45 deg C. The number of the injured spores slightly increased depending on the number of RP times. These results showed that most germinated-spores were injured by the first RP, and most of the injured germinated-spores were inactivated by the second RP. It was concluded that the treatment with more than 2 times of RP did not have any significance in increasing the inactivation of bacterial spores.
