Frozen Surimi manufacturing technology that had developed in the 1960's in Japan help build up the food industry as well as a large Surimi market, invigorating the Japanese economy. Now,a days frozen Surimi is used in such various ways as processed marine Surimi products manufacturing technology developed, as the U.S. and the Soviet Union, with the establishment of the 200 sea mile Fishery Management Act, started to show a nationalistic attitude toward the natural resources. Also, such Asian countries as Thailand, Vietnam and India promoted the development of industry by exploiting their own un-used natural resources. Accordingly, in 2000, Japan produced only 100.000 tons of Surimi products, while 450,000 tons of Surimi products were produced in other countries. Accrediting, in 2000, Japan. Especially in U.S., Surimi industry boomed due to the growth of domestic Kanikama consumption market and the acquaint of Surimi industry. Starting technology. More over, the U.S. government added amendments to the 200 sea mile Fishery Management Act and accelerated the Surimi industry. Starting at the end of 1980's, the price of frozen Surimi. Rose dramtically in Japan because of its buddle economy, and that led South-East Asian countries and India to start manufacturing frozen Aji Surimi. The trend spread quickly amang other countries. The consumption of Kanikama as will as Surimi products increased in other countries, and the frozen Surimi market kept growing internationally. With the increase in world population and the family income, it can be estimated that a change of diet will be observed worldwide ; there will be more demand for the frozen Surimi. Thus a considerable change in the demand for the frozen Surimi can be seen in the scenes of international market ; as can be observed in the process of production, manufacturing technology, market, and consumption, the frozen Surimi is getting internationalized. This paper examines the importance and the characteristics of the Surimi industry, focusing on the process how the technology of the frozen Surimi is developing. This paper also illuminates how the frozen Suirimi technology became internationalized with the enactment of 200 mile Fishery Management Act as aturnig point, dicussing the problems and tasks of the Surimi industry which has supported the internationalization of the frozen Surimi products.
