Utilization of scale as the practical guide to evaluate the optimum maturity for harvest in immature black soybean [Glycine max] 'Tanbaguro' (edamame)

Summary To clarity an optimum maturity for harvest and to determine a good harvesting index of 'Tanbaguro' edamame, a scale was developed. (1) The thicknesses and the changing color of pods are one of the good indexes of the optimum maturity for harvest in edamarne. The thicknesses of over 12mm and etiolation value of 110-130 of pods were defined as the evaluative standard of the optimum maturity for harvest. (2) A scale for the evaluation of the optimum maturity for harvest was composed of graduations (pods thicknesses: 12mm,14mm) and pods color charts (five color groups) . (3) The scale was used well from the beginning to the end of a harvest period. Color charts using the evaluation of the optimum maturity for harvest were classified into three color groups to meet the demand of a consumer (based on color and taste).
