Analysis of slaughter value variability for fatteners purchased in different areas of Lublin region (Poland)

The analysis included 105,560 carcasses of fatteners purchased by the Meat Factory from Lublin region (Poland). Estimation of carcass meatability and classification used within the EUROP grade was made on the basis of measurements using ultrasonic apparatus (ULTRA-FOM-100). Due to the addresses of 329 suppliers, every fattener was attributed to one of the nine regions. A great variability in the number of fatteners purchased in the regions and the years was observed. This proved the unstable raw material base of the factory. The lean content increased by 0.33 percent. A high dispersion of backfat thickness, height of loin "eye" and lean content in particular purchase regions and years was observed
