The influence of sweeteners on sea buckthorn (Hippophae Rhamnoides L.)

Sea buckthorn fruits are one of the richest sources of biologically active substances. As found by scientists and dieticians, fruit beverages are an optimal product by which human bodies are suoolied with necessary nutritives. The aim of this study is to test the effect of different sweeteners on sea buckthorn beverage taste. Five different sweeteners were used for sweetening of beverages: sugar, fructose-syrup, glucose, natural grape-sugar and honey. The results of sensory evaluation show that the type of sweetener influences the test essentially. It is advisable in making beverages to replace sugar by fructose syrup since it do not decrease the degree of liking of product
