Convective heat and mass transport dryers are pre dominant in bio products drying for more than five decades. Significant efforts have been done for their improvements, especially energy consumption reduction and better out coming product quality. Further steps in that direction are almost impossible, those dryers had reached maximum of capability. One can say those dryers are world record owner. New technologies will give an answer on market demands for better quality bio product on lower drying costs. In order to achieve those targets they will employ some other energy assisted to intensify moisture transportation out. In that case, the changes of bio product physical properties and their behaviour when expose to field of other energies are most important. The studies that analyze bio products behaviour during different condition have carried out all over the world. This collection of research results will served for energy efficient dryer. This is a hard way, which demands investments, intellectual, and finance. New dryer based on other than heat energy sources are presented in many papers and books, but they have one thing in common, they are still expensive.
