Application of inverse approach to calculate convective drying of apples

In this paper application of the inverse approach for simultaneous estimation of the moisture diffusivity together with the other thermophysical properties of apple, as well as the heat and mass transfer coefficients and relative humidity of the drying air by using only temperature measurements is analyzed. A mathematical model for calculating of drying process of shrinking bodies has been developed. The inverse problem for the estimation of the unkown parameters is based on the minimization of the ordinary least squares norm. The Levenberg-Marquardt method was applied for the solution of the parameter estimation problem. For the estimation of unkown parameters, the transient readings of a temperature sensor located in the mid-plane of the apple slice, exposed to convective drying, have been used. The experiments have been conducted on the experimental convective setup. An analysis of the drying air parameters and dimensions of the apple slice needed for the design of the optimal experimet has been conducted.
