The multiple plant for fruits and vegetables drying based on original post harvest technology introduces by Faculty of Agriculture, Novi Sad (Serbia) is presented in this paper. The objective was osmotic and convective dryers design where complex flow of osmotic solution and hot air happened. The especially attention was paid on osmotic dryer, so the influence of sample moisture content changes versus solution concentrate changes is studied (equitation 5). Solution viscosity is changing because different level of moisture content in solution. Lower viscosity values will cause the increase of flow rate through pump and whole device. Evaporator, as a part of system will decrease the solution viscosity. On the other hand, the viscosity of air is also changeable through the day. All this different value of air and solution viscosities are not stationary in the time, and should be taking into consider. The principles of osmotic dryer, evaporator and solar air heater operation for drying 1000 kilos fruits and vegetables daily, are presented in this paper.
