Colour quality of peppers from two localities in Serbia (Djala and Stara Pazova), and influence of antioxidants on the ground pepper colour changes during storage at three different temperatures, were investigated in this thesis. Colour changes were observed by measuring the extractable colour (ASTA), surface colour (by Minolta chromameter) and TLC chromatography.
