Objective of this research is to investigate the change of temperature in the layer of potatoes, when airflow from ventilator is cooled by recuperator, using atmospheric air, temperature of which ranged from -1 deg C to 1 deg C. The influence of heat accumulator upon temperature of airflow and the dynamics of cooling the potatoes layer were investigated. The experimental potatoes layer was put in trail stand, and placed in the room, where temperature ranged from 12.0 deg C to 14.0 deg C. Potatoes were cooled by active ventilation by recuperator. Re-circulating airflow was cooled by atmospheric airflow through the plates of recuperator. Trials were carried out in two stages. First, after 5 days of non-ventilation of potatoes, there were three hours of ventilation. During the first hour of monitoring, the temperatures of re-circulating airflow and of one from recuperator ranging decreased. The temperature of airflow from recuperator plates suddenly increased from 7.1 deg C to 23.8 deg C. This continued for half an hour. Later this temperature stabilized and remained stable. At the mean time the temperature of re-circulating airflow was constantly increasing and this effect is obvious in lowest point of potatoes layer. They starter to warm up. At the second stage, during two hour of monitoring, the temperature of re-circulating airflow and one from recuperator ranged proportionally, and temperature in potatoes layer constantly decreased subject to the height in the layer
