Adhesion of Lactococcus bacteria to the surface of traditional and biodegradable packaging laminates

The aim of research was to assess the degree of adhesion of Lactococcus sp. bacteria to the surface of laminates made of PA/PE and poly(epsilon-caprolactone) modified with starch. The adhesion was evaluated within 14 days of refrigerating storage of lactic acid cheese curds in hermetically sealed sacks produced from both materials. A higher degree of bacteria adhesion to biodegradable packaging than to PA/PE packaging was observed. Adhesion of bacteria to the PA/PE packaging showed a weak linear correlation with time of the curd storage in this packaging
