Quality of pasteurized milk available in retail outlets in Lublin [Poland]

The quality of consumption milk distributed in the retail outlets in Lublin was evaluated. Altogether, 36 pasteurized milk samples were examined (30 packed in plastic bags and the remaining 6 in cartons). Two seasons were distinguished: winter and spring-summer. It was found out that in most samples, the analysed consumption milk had higher fat content than declared by the producer (higher than the PN standard). The average protein content amounted to 3 percent. Milk mass density decreased with the fat content. The average values for active as well as potential acidity in the tested milk samples fell within the standard limits. Water adulteration was most frequently identified in polyethylene bags which ranged from 1-5 percent. The total microbial content was relatively low and did not exceed the accepted standards. However, carton milk had better microbiological quality. Cola titre in the examined milk ranged between 0 and 10E-3. Exceeding the standards was identified in milk packed in polyethylene bags.
