X-ray diffraction of native starches

Sharp and unsharp X-ray diffraction pattern of corn, cassava and potato starches were studied, and compared with the unsharp diffraction pattern of gelatinized starch. The existence of three kinds of structures in native starches-microcrystal, sub-microcrystal and amorphous-are proposed. In accordance with the diffraction pattern X-ray diffractograms of native starch can be divided into three regions, each corresponding to one of the crystal or amorphous material types. The relative proportion of each can be determined from the crystalline or amorphous standards.
