[Biochemical compound of strawberry fruit in the conditions of Belarus]

Research results of strawberry fruits biochemical compound are presented. The varieties of Belarusian and foreign selection were studied. Variability of accessions in biochemical indices, soluble dry matters, sugars, titratable acidity, ascorbic acid content, phenol compounds and potassium, were pointed out. For further use in selection with the purpose of improvement of quality of fruits strawberry varieties were marked on separate parameters of biochemical structure: dry soluble matters content – varieties Gera (10,73%), Dachnitsa (9,80%); sugars - varieties Gera (8,04%), Zenga-Zengana (7,79%); titrating acidity – varieties Rusanovka (0,75%), Luna (0,8%), Kokinskaya rannyaya (0,80%), Gera (0,83%); ascorbic acid – variety Vola (38,5 mg/100 g); phenol compounds – varieties Venta (306 mg/100 g), Slavutich (288 mg/100 g), Kokinskaya rannyaya (283 mg/100 g); pectines - varietiesVega (0,84%), Gera (0,78%); potassium - varieties Viktoria (213 mg/100 g), Vola (180 mg/100 g). Distinctions on potassium accumulation in depending on variety were more essential than influence of weather conditions. A variation of the potassium content in berries in depending on meteorological conditions of year rather low: efficiency of variation 2,8-20,8 % but in overwhelming majority up to 10 %.
