In the breeding program aiming at developing rice varieties with a new useful grain characteristic, we bred a new rice variety, 'Ayunohikari', at the Hokuriku Research Center of the National Agricultural Research Center. This variety is a non-glutinous rice variety with the high content of water soluble polysaccharides (WSP) and the high accumulation of gamma-aminobutyric acid (GABA) in germinated brown rice. 'Ayunohikari' was bred from the progeny of a cross between EM5 and Ouu 331 (named as 'Fukuhibiki' later) in 1989. EM5 is a mutant line with high WSP content selected from 'Kinmaze' treated with N-methyl-N-nitrosourea (MNU) at the Kyushu University. From the Fsub(7) progenies, we selected one promising line and named Hokuriku 169, and submitted the line to various locations for evaluating local adaptability. Hokuriku 169 was officially registered as Paddy Rice Norin 405 in MAFF and in 2005 it was named as 'Ayunohikari'.
