The deteriorating ecological situation can cause various pathological conditions, resulting in metabolic dysfunction in humans. This raises the issue of reversing such dysfunction by diet additives with specific 'normalizing' features. Such features are credited to natural drugs based on the products of beekeeping and certain medical herbs. The authors have formulated an approach to the design of new food additives based on special ratios of biologically active ingredients from propolis and extracts of herbs. The biochemical composition of the phenolic fraction of propolis and carotenoid extracts from plants were analyzed using thin layer chromatography followed by spectrophotometry of eluted fractions. It was shown that the chemical contamination of the environment (by xenobiotics) leads to changes in the balance between the different biologically active fractions both in propolis samples and in carotenoid extracts from plants. This data was used to optimize the content of biologically active ingredients extracted from samples originating in sites with different levels of environmental pollution. The developed approach allows the production of apitherapy food additives with planned antioxidative, detoxifying and immunostimulating features. Technology has been developed to produce two such biologically active food additives: a) carotenoid oil extracted from medicinal plants and b) the phenolic fraction of the propolis. The active ingredients of carotenoid oil extract include carotene, vitamins E and K, non-saturated fatty acids and their ethers and sterols. The phenolic fraction of propolis contains flavones, flavonols (luteolin, apigenin, cvarcetin, robidanol), oxykrinins, phenolcarbonic acid and other compounds. These food additives have already been recommended for apitherapy treatments and prophylactic action.
