Estimation of milling and baking value of winter triticale varieties depending on nitrogen fertilization

The material under examination was the grain of 12 winter triticale varieties. The influence of increasing levels of fertilizer nitrogen (0, 80, 170 kg/ha) on the milling and baking properties were analysed. In the majority of the varieties nitrogen fertilization, caused milling properties to deteriorate (low flour yield, high ash content, low milling efficiency factor K). Raising fertilizer nitrogen levels influenced the differentiation of the bread volume obtained from examined varieties and improved the cell structure of the crumb
