Flavonoids and some mineral components content in buckwheat seed of Polish varieties

The content of crude protein, some minerals (Mg, Zn, Cu, Fe) and flavonoids (rutin, quercetin, orientin, isoorientin, vitexin, isovitexin) were studied in dehulled seeds and hulls of five Polish varieties of buckwheat. The crude protein concentration in dehulled nuts was statistically the same in all cultivars examined - at an average 13,85 percent of DM. Differences in the concentration of magnesium and zinc were also not significant. Statistically significant differences were found in the concentration of copper and iron in dehulled buckwheat nuts; besides of minerals two flavonoids, rutin and isovitexin were found too
