Food of animal origin is the major source of human exposure to chlorinated hydrocarbons. Important aspect of food safety and human health is regular control of chemical residues in food producing animals. It should be noted that the hazard of organochlorine pesticides and PCB residues in tissues and animal products seems to be not serious. It was estimated that the daily intake of these contaminants from the food of animal origin is very low and should be considered as safe for health of consumers
