Dressing percentage of domestic spotted cattle

Domestic spotted cattle Simmental breed is the most common breed of cattle in our country. The paper presents the slaughter results in domestic spotted cattle. Live body weight of cattle and weights of warm carcasses (free of kidneys and kidney tallow) after slaughter were individually examined on the sample of 256 head of cattle. Based upon the data obtained, dressing percentage and its dependence upon the cattle weight at slaughter and upon sex were calculated. The research showed that the dressing percentage ranged from 45.44% to 58.69% and from 47.13% to 53.72% in male and female cattle, respectively. Average dressing percentage was 53.68% and 50.41% in male and female cattle, respectively.
