Appropriate conditions for a production of gelatin from Red Snapper (Lutjanus sanguineus)'s bones were determined. The optimal conditions for preparation step was studied, by varying the concentration of sodium hydroxide, acetic acid and soaking time. It was found that the optimal conditions were soaking the bones in 0.8 percent NaOH for 2.0 hours and 0.8 percent Acetic acid for 2.0 hours. Extraction of fish gelatin was studied by varying the temperature and time. The optimal condition for extraction of fish gelatin was at 70 deg C fro 2.0 hours. The yield of dried gelatin was 2.80 percent (w/w). The physical, chemical and biological properties of gelatin were determined. It was found that the gelatin contained 13.50 percent moisture content and 1.93 percent ash with pH 6.63. The viscosity was found 20.30 Cp. and gel strength 2265.10 g. No pathogenic bacteria was presented.
