The Carboxy Methyl Cellulose coating effect and packaging to improve the quality and shelflife of carrot var. Nantes during preservation in cold store at 0C and 85% and 90% RH for 4 months and also in environmental conditions at 30 C and 65% RH for 2 weeks was studied. For coating and packaging of the samples , 2% solution of Carboxy Methyl Cellulose and poly ethylen plates and stretcher films were used. 4 samples were prepared : 1- the samples coated with Carboxy Methyl Cellulose and packaged with stretcher film 2-the samples only coated with Carboxy Methyl Cellulose 3- the samples only packaged with stretcher film 4-the reference samples Then according to a time table the samples were tested for water content , brix ,sugar content , texture and organoleptic parameters (colour , flavour and odour). This investigation showed that the used edible coating and stretcher film had a profound effect on the prevention of lossing water and sugar conten ts during preservation in cold store for 4 months and environmental conditions for 2 weeks. But the best result of texture was obtained from the samples only packaged with stretcher film and the highest content of brix was due to the reference samples. The results of organoleptic tests for both the samples coated with Carboxy Methyl Cellulose and packaged with stretcher film and the samples only packaged with stretcher film were satisfactory.
