In the southern part of Chikugo, five varieties of winter harvesting frizzling spinach were examined for the varieties and quality that fulfill the requirements by consumers, and for the purposes of establishing a recommendable cultivation method. It was found that the Brix percentage and vitamin C contents were higher in 'Kanaji' and 'Tirimenhourensou' than in other varieties. Also, in order to attain 10% Brix per 70g spinach of these two varieties, it was necessary to sow after the middle of October under the climatic condition of an average year. In the case of using multi purpose compost, the frizzling spinach with 10% Brix can be harvested when sown after November. This timing of sowing is effective for early growth and prevention of dirt from sticking to the leaves.
