The aim of study was determination of differentiation of winter wheat varieties in respect of falling number, their reaction on induced sprouting in ear and interaction of varieties with seasonal variability of environmental conditions. The falling number depended on precipitation distribution on the period of grain maturity and in successive years it was 296, 294 and 190 seconds. High values of the falling number (up 280 sec.) and their considerable stability were found for the cultivars Nutka, Slawa, Mobela. The induction of sprouting in spikes caused a decrease in the falling number by 102 sec. the mean differentiation of cultivars being 41-186 sec
