Influence of nitrogen fertilization on technological quality of winter wheat grain

The aim of the study was to determine the effects of different levels of nitrogen doses on the grain quality properties of winter wheat. After harvest the grain and flour qualities were determined according to the ICC Standard Methods (density, ash content, grain glassiness, flour extract, protein content, wet gluten, sedimentation indicator, falling numbers, water absorption, dough energy, dough development, dough resistance, dough elasticity, dough stability, dough energy). It was shown that increasing nitrogen fertilization has significant influence on grain glassiness. The milling and baking values originated from quality traits of winter wheat varieties. The best value of four parameters quality were found for the grain of Korweta and Mewa cultivars
