Utilization of chosen winter wheat cultivars from ecological cropping system to the bread production

The utilization of flour from of selected winter wheat cultivars: Elena, Kobra, Juma and Roma from ecological and conventional crop production to bread production was the purpose of the study. The following parameters were evaluated: protein content, gluten quality and quality, Zeleny' test, falling number, rheological properties of dough. The direct method included baking laboratory and evaluation of the obtained bread. The protein content and gluten were lower in the wheat flours from ecological crop production than from conventional. The lower water absorption (except cultivar Elena), shorter dough stability (except for cultivar Kobra) and shorter dough development (concept for cultivar Kobra) and shorter dough development (only cultivar Elena) were characterized the what flour from ecological crop production
