Food safety: farm animals as source of pathogen microorganisms

Consumer protection and food safety has become the most relevant issue in relation to the production of food of animal origin. Animal health and welfare should be next priority, because the occurrence of some of zoonotic pathogens seems to have increased significantly over recent years. Leading causes of illness worldwide are diarrhea diseases, almost all of which are caused by food-borne or water borne microbial pathogens considered to be zoonotic. The authors briefly describe the most important emerging food-borne zoonotic pathogens (Salmonella spp., Campylobacter spp., enterohaemorrhagic Escherichia coli, Cryptosporidium parvum, and Toxoplasma gondii) including new facts on Noroviruses and Hepatitis E virus. For better protection of food safety and public health, as well as animal health and welfare monitoring of the whole farm-to-fork food production chain should be implemented.
