A new combine technology for fruits drying is being developed at the Faculty of Agriculture in Novi Sad, Serbia. That fiendly procedure is consists of osmotic and convective drying. Two main the study objectives were settled down. The first goal is high quality dried products by non-aggressive processing and the second is low price of the production. An energetically sustainable model for fruits drying needs to be involved. The study hypothesis that economical model of dried biomaterials production on the usage of solar energy and heat energy by combustion of orchard residues is possible. Technical model and results of energy balance on base two mentioned sources are presented in this paper. Solar air heater is tested and these results are showed.
