[New preparations for stabilization of juices and drinks against colloid feculences]

Possible using of amorphous silicon dioxide Astar of 3 types AS-1 (1), AS-2 (2) and AS-3 (3) to stabilize juices and drinks against colloid feculences was studied. The activity of the preparations (doses 25-1000 mg/cubic decimeter) were analyzed in experiments of depositing protein substances from water solutions (model solutions tannin + gelatin, as well as apple juice and apple-black chokeberry drink), their filtering characteristics were determined. The model solutions were defecated with the preparations (1) and (2) only at the dose of 1000 mg/dm3. (1) increased the clarity of the solution from 6.2 to 85%, and (2) – only to 20%; (3) defecated the solutions starting from the dose of 500 mg/cubic decimeter increasing the clarity of the solution to 56.3%, and at the dose of 1000 mg/cubic decimeter – to 87.0%. In treating juices and drinks the most active were (1) and (3). Their optimum doses were 200-800 mg/cubic decimeter; all of the juices and drinks were after treatment resistant to colloid feculences. The Astar preparations had no negative influence of the flavor and aroma of the product. As a filtering material the preparations have potential resources for creating powdered filtered materials of good qualities. The Astar preparations are perspective for defecation and stabilization of wine stocks.
