The effect of adding Se of different origin into the chicken feed on the quality of Mm. pectoralis

On the basis of the established average values of pH sub(k) and criteria for the normal meat quality; it has been concluded that Mm. pectoralis of the experimental groups of chicks are of normal quality. Organic Se added to feed for chicks in the quantity of 0.3 ppm in the form of Sel-Plex preparation had a significant effect on the reduction of drip loss of breast meat. Colour of the surface of Mm. pectoralis in all the experimental groups of chicks, according to the criteria for lightness (L*), corresponds, on the average, to pale colour (PSE - pale, soft, exudative quality), and colour at cross section of Mm. pectoralis on the average corresponds to the normal quality. Colour (lightness - L*) at the cross section of Mm. pectoralis of chicks of the experimental group 4 fed on mixtures with the addition of 0.3 ppm of Sel-Plex is the darkest, and the propoRtion of red colour (a*) is the highest.
