The presence of ochratoxin A residue in blood plasma, liver and kidneys of slaughtered swine. [M.Sc. thesis]

The aim and task of this study was to determine the presence of ochratoxin A (OTA) residue in blood, liver and kidneys of fattening swine, slaughtered regularly originating from different areas of Vojvodina Province (Serbia) and Serbia. During a three months investigation period, a total of 60 blood, 60 liver and 60 kidneys samples were analysed. The presence of the OTA residue was found in 56.6% of examined plasma samples, 46.6% of liver samples, and 41.6% of kidneys samples. The research showed that the average OTA concentration in plasma samples originating from different areas of the Vojvodina Province (Serbia) and Serbia was not significantly low (p is greater than 0.05), in liver was significantly lower (p is less than 0.01) between samples originating from region B.Topola and Kovilj, in kidney from same areas was significantly lower (p is less than 0.01), while in kidneys originating from Kovilj and Senta was high significantly lower (P is less than 0.001). Mean distribution followed the pattern: kidney is greater than plasma is greater than liver (100 is greater than 93 is greater than 92%).
