Indicators of the internal environment of beef cattle during fattening and their correlation to the quality of beef

Half-siblings (bulls, heifers and steers, groups of three animals with the same father) housed in the same stable were used in this study aiming to assess relations between blood components, growth intensity and meat quality. Live weight was evaluated and blood samples were taken on days 310, 403, 448, 479, 512, 554 and 618 of age. The concentrations of total proteins, glucose, total cholesterol, urea and catalytic concentrations of ALP, ALT, AST, Ca, inorganic P, Mg and Cu in the blood plasma were assessed. The levels of the variables studied were within the range of the physiological values for the respective age category. Total plasma cholesterol conc. were significantly higher in heifers than in bulls and steers. The last samples taken prior to slaughter showed that blood serum glucose and urea conc., blood plasma proteins conc., N or total protein levels in muscles and water-holding capacity of meat were correlated with meat tenderness.
