Amyloglucosidase(glucoamylase) is an important industrial enzyme which is widely used in food industries specially for production of glucose syrups. to now Iranian starch industries glucoamylase requirements is supplied almost entirely via import. In this research appropriate conditions for production of glucoamylase by solid state fermentation method and extraction of produced enzyme from fermented solids was investigated. Seven Aspergillus niger strains including five international and two local strains were investigated and the strain CCUG33991 was found to have the best performance. Furthermore, the effect of fermentation time, wheat bran size and composition of substrate additives were investigated in this regard. The appropriate conditions was find to be a fermentation time of fifty hour, medium sized bran, and no additive.
