This study was conducted to determine apple consumer preferences in terms of quality and evaluate the relation between preferences and characteristics of consumers. Data were gathered by conducting questionnaire surveys among residents of Lublin, Poland, in 2004. It was found that demographic and socioeconomic characteristics of consumers have a statistically significant influence on consumer preferences. The opinion of consumers on high quality apples were determined: have no strange taste and odour, no visible sign of diseases and pests, and no mechanical injuries, with fresh appearance and good taste, juicy and hard fruit pulps, and appropriate fruit size. Based on the results, it is suggested that specific promotion must be directed to particular segments of consumers
