[Health food production using haw and aronia fruits]

There were given 2 types of new products – an apple fruit mixture Feya where as a basic feed use was made of apples, as a fruit filler – haw berries and chokeberry fruits, as a structure former – a pectic jelling powder – 50% apple syrup prepared by making candied fruit from apples. The study of chemical composition of fruit crops grown in the Krasnodar Territory has shown that haw berries (3 types) are rich in anthocyans, leucoanthocyans, catechins compared to their content in apples; in haw berries also beta-carotene was detected, a comparative high content of vitamin E was observed. Especially valuable in chokeberry fruit are a combination of ascorbic acid and P-active substances: catechins and anthocyans. When using haw berries and chokeberry fruit as a fruit component they are wiped by an abrasive pulping machine preventing from grinding coarse seeds and getting in the fruit pulp. Apples are cut, and the pectic jelling powder is soaked for 3 h in an apple syrup for swelling in the ratio of 1 to 10. The mixture is boiled under intensive stirring at t 90 degrees C for 7 min up to the content of 56% of dry matters in the desired product. There are given data on nutritional value of the apple fruit mixtures developed to use haw berries and chokeberry fruit grown in the climatic conditions of Kuban and providing as BAS sources a 100% daily requirement of human for vitamin and beta-carotene and 20-25% daily requirement for vitamin E
