The effect of many morphoregulators on amylolytic activity during germination of wheat grains was tested in model experiment conditions based on aproximate analogy of the processes of germination and sprouting. Experimental conclusion was formulated with respect to explanation of starting mechanisms of grain germination as well as sprouting. Exogenously applied morphoregulators (ABA, CCC, DMP) caused the inhibition of alfa-amylase activity and subsequently also germination processes. In contrast, GA3 effectively stimulates an increase in alfa-amylase activity and in germination. Results confirmed the knowledge that GA3 is the inductor of amylase gene expression, thus being also responsible for starting catabollic processes of germination and sprouting. In contrast, matters of ABA, CCC, DMP types inhibit amylolytic activity, which in case of grain formation causes both maturation stimulation and dormation phase stabilization and thus an improvement in resistance of the developing grain against premature germination (sprouting). Given processes have a direct influence on wheat food quality.
