To increase competitiveness and the successful marketing of fruit and fruit products from Serbia, it is necessary to introduce measures which guarantee the quality and the safety and accuracy of the product to end consumers. In this paper, we aim to analyze some specific features that follow the production of apricot and provide opportunities for the introduction of Global GAP standards in primary production. At the same time we pointed out that it is also an important prerequisite for HACCP standardization of quality that would be applied during further processing of apricot. Such system have been introduced in the chain of production-quality apricot (fresh or processed) risks involved in production and guarantee the correctness of finished products.
