Invert sugars, organic acids and vitamin C in mulberry | Sadržaj invertnog šećera, organskih kiselina i vitamina C kod duda

The objective of this study was to determine the fruit contents of invert sugar, organic acids (malic and citric acids) and vitamin C (ascorbic acid) in black (Morus nigra) and white (Morus alba) mulberries grown at two different locations in Serbia, during 2009. The analysis revealed the following: the average invert sugar content ranged from 7.5% (black mulberry - L2 location) to 15.0% (white mulberry - L1 location); the average malic acid content ranged from 1.6 g/100 gr (white mulberry - L2) to 2.2 g/100 g (black mulberry - L1); the average citric acid content ranged from 1.94 g/100 g (white mulberry - L2) to 2.72 g/100 g (black mulberry - L1); the average vitamin C (ascorbic acid) content ranged from 7.08 mg/100 g (white mulberry - L2) to 10.164 mg/100 g (black mulberry - L1).
