Comparative biochemical studies of muscular tissue of plaice and long rough dab in the process of storing at t -28 degrees C for 6 months were conducted. Over this period in the muscular tissue the total loss of water was 1.52%, in the muscular tissue of long rough dab – 0.98%, the content of fat increased by 0.4 and 0.52%, amine nitrogen – 0.88 and 1.16 mg%, the acid number – by 0.28 and -.45 mg KOH/1 g of fat, peroxide number – by 0.002 and 0.004%, and the content of protein reduced by 0.54 and 0.42 mg/100 g, respectively. The content of ascorbic acid for the storage time changed abruptly which is explained by forming and decomposing ascorbate protein components. It is concluded that biochemical processes in long rough dab go more intensive than in plaice. This should be taken into consideration when stored.
