In the field experiment, set in the period 2006-2009 in training and experimental field of Department of Crop production in Agricultural University - Plovdiv five triticale varieties has been tested: the standard AD-7291, Rakita, Sadovec, Rojen and Zaryad. The content of crude protein was determined from representative samples of grain through the determination of the total Kjeldahl nitrogen х 5,75. The content of amino acids in grain of triticale was determined after hydrolysis of samples with 6 n HCl with amino-analytic mashine type AAA881. It was found that a rye type variety triticale Rakita has the highest protein and lysine content in grain compared with varieties Rojen, Sadovec, Zaryad and AD-7291. The higher content of amino acids in grain of variety Rakita is a prerequisite for better technological and baking properties of flour and dough and better quality of bread, and higher biological value when used as feed.
