Chino. 探讨河蚬蛋白酶解液在体外的抗氧化特性,通过用普鲁士蓝反应法测定河蚬酶解液还原能力,在邻苯三酚自氧化体系和Fenton体系中分别检测河蚬酶解液清除超氧阴离子自由基(O2. )和羟自由基(・OH)的能力,并考察河蚬酶解液在亚油酸过氧化体系中的抗氧化作用。河蚬酶解液具有显著的清除O2. ・和・OH作用,且活性与剂量呈量效关系,并对亚油酸脂质过氧化也显示出较强的抑制作用。[著者文摘]
Mostrar más [+] Menos [-]Inglés. To study the antioxidant activities of enzymatic hydrolysates from Corbicula fluminea. Its reductive activity was determined by the Pursian blue reaction. Scavenging effects on superoxide anion free radicals (O2. ・ )produced from the self oxidation of pyrogallol and hydroxyl free radical(・OH)produced from Fenton system were measured. In addition, the antixoidant effect on peroxidation of linoleic acid was studied. Enzymatic hydrolysates from Corbicula fluminea has evidant effects of scavenging O2. ・and ・OH in a concentra- tion-dependent manner. In addition, enzymatic hydrolysates also has inhibitory effect on the peroxidation of linoleic acid.
