Optimization and modeling of the drying characteristics of janitor fish (Pterygoplichtys disjunctivus)

The determination of the drying characteristics of the janitor fish was done using the regression surface analysis and Box and Behnken design resulting in 15 runs. The samples were subjected to drying air temperature of 50 deg C, 60 deg C, and 70 deg C, 0.21 m/s, 0.24 m/s and 0.27 m/s velocity, and cuts 1,2 and 3. The responses observed were averaged drying rate, final moisture content, rehydration rate, rehydration ratio and moisture ratio. Analysis of Variance showed that only the drying rate of the sample was significant to air temperature at 95% level. All the other dependent parameters were insignificant due to the restriction of the surface exposed on each cut and the thick scales of the samples. Using the superimpose contour plots of the dependent variables, the optimum condition were determined to be 62.5 deg C, 0.24 m/s and 2 cuts. Optimum values observed were compared with predicted values and showed less than 20% error and could then be concluded acceptable. The moisture ratio data were considered to obtain the model for the drying characteristics of the janitor fish. Using Curve expert 1.3, the best fit equation was observed at run 11 and could be expressed as: MR=0.42 + 0.78 cos (0.0011t + 0.78), where MR = moisture ratio, dimensionless and t=drying time, minutes, and expression that can predict the moisture at any dry time, t.
