This paper presents the research results of biennail field trial of the most important sweet cherry variety characteristics in the agro ecological conditions of Vojvodina Province in the Republic of Serbia. The examined sweet cherry varieties characterized with late maturation are Summit, Germersdorfska, Durone nero III, Lambert, Sunburst, Sue, Merton Crone, Durone Nero I and Melitopoljska Crna. The measured pomological characteristics are: fruit weight, fruit dimensions (thickness, width and height), pedicle dimensions (length and thickness), as well as the mass of flesh, kernel and pedicle. In addition, the chemical composition of the fruits were examined: the content of dry matter (total and soluble), acid content (malic acid percentage), ash content, cellulose content, Ca - pectat and sugar content (total, reducing sugar and sucrose). The production and technological values of sweet cherry varieties were determined by means of compote assessments of several compotes traits: colour, smell, taste, state of the fruit products and their consistency.
