The aim of this work is the quality control of pasteurized beetroot, which is found in the free market, and using chemical, microbiological and organoleptic analyses determine percentage values of certain elements of the analyzed products and compare it with the respective terms of the Ordinance on the product quality. In order to meet the set aim, three samples from different manufacturers were subjected to analysis. The conclusion is that all three analyzed samples of pasteurised beetroot, during the period of analysis, showed product safety, favorable chemical composition, as well as good organoleptic properties and hence comply with the provisions of the Ordinance on quality of fruit and vegetables, Official Gazette of R BiH 2/92.
