Production process and nutrition value of the leaf vegetables under glass in the North of Russia

Crop productivity and accumulation of biological value nutrition in the leaf vegetables cultivated during winter in the greenhouses of Ltd. Company Prygorodnij were studied. Lettuce culture produced the green biomass more than 6 kg/square meter, and yield of the rest leaf vegetables was 2-3 kg/square m over 30-40 day growth period. CO2-assimilation rate of coriander, mint and ruccola leaves was near 6 micro mol/square m, chive and lettuce ones was less by 3-4 times. It was found out that antioxidant compound content was directly relative to phenol compound content. Total nitrogen content varied from 280 to 580 mg/100 gram. The data on crops yield and antioxidant, vitamin and mineral nutrients contents demonstrate the availability of greenhouse vegetable — growing for supply of human on the North by biological value nutrition
