Kvalitet sirovog kravljeg mlijeka na području Kosova

Within economic stabilization of Kosovo, development of dairy industry is anticipated for following period. For such development good raw material basis is essential. Therefore, the basic aim of this work was to determine quality of farm raw milk. According to experimental procedure, quality of raw milk on 6 (six) private-owned farms located in different regions of Kosovo were analysed. 116 samples of milk from individual milch cows were analysed. Average milk composition was: dry matter 12,96%, milk fat 4,24%, non-fat dry matter 8,71%, proteins 3,38% and lactose 4,76%. Average acidity was 7,54 oSH, freezing point -0,515 oC and pH value 6,64. Obtained analysis results have shown good composition of milk. In order to determine differences in milk quality between breeds of tested milk results of milk analysis were classified according to cow breeds (East-Frisian, Simmental and Swiss-Brown). On the basis of these results it can be concluded that there were no high differences in milk quality due to breed, although content of components for Simmental cow milk was slightly higher.
